This delicious soup may be the easiest recipe ever, thanks to a little help with store-bought ingredients from your local market. Many upscale shops feature handcrafted pasta shapes frozen in packages, including cheese tortellini. You could make homemade stock but there are many very good brands ready-for-purchase. And be sure to look for imported Parmigiano Reggiano cheese for grating over your bowl of hot broth and cheese tortellini pasta. With so few ingredients you'll want to purchase the best available.
Cheese Tortellini in Broth
2 tablespoons olive oil
2 tablespoons finely chopped onion
1 teaspoon kosher salt
2 quarts store-bought low-sodium chicken stock
1-pound frozen tortellini filled with cheese
1 tablespoon chopped parsley
1 small wedge Parmigiano Reggiano cheese for grating
Working with a large heavy-bottomed soup pan over medium-high heat, add in the olive oil and chopped onion. Cook for 1-2 minutes until the onions soften. Stir in the salt and chicken stock, bring to a boil. Add in the tortellini, cooking as stated on the package. Remove the pan from the heat, add in the chopped parsley. Serve hot with freshly grated Parmigiano cheese.
